How to make pretzel dough:

  1. Making pretzel dough is not difficult, you just need to prepare it in advance. The first step is to dissolve the yeast in the water and set aside for 5 minutes, or until it starts bubbling.
  1. In a bowl of a planetary mixer place the dry ingredients: flour, sugar and salt and mix. Add the yeast and, using the bread attachment, mix on low speed for 8 minutes, until a smooth, elastic dough forms. 

Tip: If the dough is dry and crumbling, add a little more water.

  1. The next step in this homemade pretzel recipe is to shape the dough into a ball, place it in a greased bowl, cover with a cloth and let it rest for 30 minutes to 1 hour, until doubled in size.
  1. After that, knead the pretzel dough on a floured surface for 1 minute or until very smooth. Divide the dough into 8 parts and roll into 40-50cm long rolls. 
  1. Then interlace the ends of the rolls and add to the dough. Cover the pretzels with a cloth and let rise for another 20 minutes.
  1. After the dough rises, it’s time for the “alkaline bath”, responsible for giving the pretzels their characteristic color. To do this, heat a pan with 6 cups of water and bicarbonate of soda and, when it boils, soak 2 or 3 pretzels for 2 minutes. 
  1. Remove with a slotted spoon and repeat with the rest.
  1. Finally place the salted pretzel dough on an oven tray lined with parchment paper and sprinkle with some salt.
  1. Bake at 200ºC for 10-12 minutes, or until the pretzels are golden brown, and they are ready to serve! You can eat it simple like this or stuff it.
