When you remove the tail, gut, and head it is time to remove the scutes of the fish that are present on both sides of the fish. Remove the fins and start by transforming the meat of the sturgeon into a fillet. Start with one side at a time and be delicate when cutting the meat from the bones to get the more meat you can.

Then, when you finish the removal of bones and ribs, remove the dark red blood vessels and it will be time to cut the fillet into pieces. The size will depend on your preference whether you want to eat them raw or cooked.
